Ingredients:

  • - 1 cup poha (flattened rice)
  • - 1 medium-sized onion, finely chopped
  • - 1 medium-sized potato, peeled and diced
  • - 1/4 cup green peas
  • - 1 green chilli, finely chopped (adjust according to your preference)
  • - 1/2 teaspoon mustard seeds
  • - 1/2 teaspoon cumin seeds
  • - 8-10 curry leaves
  • - 1/4 teaspoon turmeric powder
  • - Salt to taste
  • - 2 tablespoons oil
  • - 1 tablespoon lemon juice
  • - Fresh coriander leaves, chopped (for garnish)
  • - Roasted peanuts (optional, for garnish)

Instructions:

1. Rinse the poha gently under running water in a sieve or colander for a few seconds. Drain the water and let the poha sit for about 5 minutes to soften. Be careful not to oversoak or make it mushy. Set aside.

2. Heat oil in a pan or kadai over medium heat. Add the mustard seeds and let them splutter. Then add the cumin seeds and curry leaves. Sauté for a few seconds until fragrant.

3. Add the finely chopped onion and green chilli to the pan. Sauté until the onion turns translucent and lightly golden.

4. Add the diced potatoes and green peas to the pan. Mix well and cook for 3-4 minutes until the potatoes are tender. Cover the pan with a lid to speed up the cooking process.

5. Sprinkle turmeric powder and salt over the mixture. Stir well to coat the vegetables evenly.

6. Now, add the soaked and drained poha to the pan. Gently mix everything together, taking care not to break the poha flakes. Cook for another 2-3 minutes, allowing the flavours to blend.

7. Drizzle the lemon juice over the poha and give it a final toss. Taste and adjust the seasoning if needed.

8. Remove from heat and garnish with freshly chopped coriander leaves and roasted peanuts (if desired).

9. For added flavour and texture, Serve the delicious Poha warm with yoghurt, pickle, or sev (crispy chickpea noodles).

Enjoy your homemade Poha, a delightful Indian breakfast that is delicious and packed with nutrients to kick-start your day on a flavorful note.
