Here's a recipe for making delicious samosas, a popular Indian snack:


Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1/2 cup lukewarm water


For the filling:

  • 2 large potatoes, boiled and mashed
  • 1/2 cup green peas, boiled (optional)
  • 1 small onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 green chilli, finely chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander leaves, chopped (optional)


For frying:

  • Vegetable oil for deep frying


Instructions:

1. combine the all-purpose flour and salt for the dough in a mixing bowl. Add the vegetable oil and mix well until the mixture resembles breadcrumbs.

2. Gradually add the lukewarm water and knead to form a smooth, firm dough. Cover it with a damp cloth and let it rest for 30 minutes.

3. In a pan, heat 2 tablespoons of vegetable oil. Add the cumin seeds and let them splutter.

4. Add the chopped onion, ginger-garlic paste, and green chilli. Sauté until the onions turn golden brown.

5. Add the coriander powder, turmeric powder, red chilli powder, and garam masala powder. Stir well.

6. Add the mashed potatoes and boiled peas (if using) to the pan. Mix everything together and cook for a few minutes. Add salt to taste. Garnish with fresh coriander leaves (optional). Allow the filling to cool.

7. Divide the dough into equal-sized portions and roll each portion into a thin oval-shaped sheet.

8. Cut each sheet in half lengthwise to form two semi-circles.

9. fold one semi-circle into a cone shape, overlapping the edges. Seal the edges by applying a little water.

10. Fill the cone with the prepared potato filling, leaving some space at the top. Seal the top by applying water and pressing the edges together.

11. Repeat the process with the remaining dough and filling.

12. Heat oil in a deep pan or kadai for frying. Once the oil is hot, gently slide in the samosas, a few at a time, and fry them on medium heat until they turn golden brown and crisp.

13. Remove the fried samosas using a slotted spoon and drain excess oil on a paper towel.

14. Serve hot with chutney or sauce of your choice.
